糯米粉45g、粘米粉35g、澄面20g、菠萝馅75g、红豆馅75g、炒熟的糯米粉适量
tips：所谓的冰皮，其实就是用糯米粉和粘米粉制作而成，加入了澄粉之后呈现出半透明装而成的。因为饼皮是由熟制的米粉做成的，所以不需要烘烤，吃起来也不上火。另外，想要做出好看的冰皮月饼，模具是必不可少的，记得备上。
2.制作步骤
步骤1：把所有食材准备好，然后把糯米粉、粘米粉、澄面放进一个大碗A里面搅拌均匀；
步骤2：另开一个大碗B，把牛油、植物油、糖粉放入其中，然后搅拌均匀直到材料混合；
步骤3：把大碗B里面的溶液慢慢倒入大碗A里面，边倒边搅拌，直到充分融合没有颗粒状为止，然后盖上保鲜膜静止20分钟；
步骤4：开一个锅烧开水，然后把静置后的冰皮糊放进锅中大火隔水蒸25分钟，然后取出来摊凉；
步骤5：面粉摊凉之后，把面糊平均分成8小份，然后开锅炒少量熟粉作为手粉，避免沾手；
步骤6：把准备好的内陷也平均分成8小份；
步骤7：戴上一次性手套，沾上少许手粉防粘，把冰皮放在手心压扁，然后放入内陷，包好，捏紧收口；
步骤8：在月饼模具里面撒入少许手粉，然后放入包好的月饼胚，轻轻一按，压出形状就可以了；
步骤9：冰皮月饼完成之后最好放入冰箱，冷藏几个小时之后吃口感会更好。
